Spinach Potato Bake1 lb extra lean ground beef
1/2 cup mushroom slices
1 small onion, chopped
2 garlic cloves, minced
1 (10 oz) pkg frozen spinach, thawed and well drained
1/2 tsp nutmeg
1 lb baked potatoes
salt and pepper to taste
shredded cheddar cheese
Bake potatoes. Remove pulp and place in bowl. Add first six ingredients, mix well. Fill potato skins with mixture. Top with cheese, salt and pepper.
Note: If you can't eat spinach try this with broccoli.
