Potato Puff Casserole (2)

1 small onion, chopped
2 T. butter
1/2 c. milk
1/2 t. ground mustard
1/4 t. salt
1/8 t. pepper
2 c. mashed potatoes
2 eggs (separated)
1 c. (4 oz) shredded cheddar cheese


In skillet, saute onion in butter until teder. Stir in milk, mustard, salt & pepper and bring to boil. Remove from heat, stir in potatoes & mix well. Stir in egg yolks until smooth. Cool at room temperature for 15 minutes. Stir in cheese. In small bowl beat egg whites until soft peaks form. Fold into potato mix. Spoon in greased 1 qt. dish. Bake @ 350* for 40-45 minutes or until puffed & lightly brown.
