Grilled Potato and Onion Packages

2/3 cup olive oil
1 T Dijon mustard
2 T chopped fresh thyme (or 1 T dried)
1 tsp salt
1 tsp ground black pepper
2 lbs idaho potatoes, peeled and sliced 1/4" thick
2 large red onions, peeled, halved, sliced 1/2" thick
nonstick veg. oil spray
aluminum foil, heavy duty

Combine oil, mustard, thyme, salt and pepper. Whisk to blend well. Add potatoes and onions to oil mixture. Toss to coat well. Set six 18x9" sheets of heavy duty aluminum foil on work surface. Spray foil w/ nonstick spray. Divide potato mix among the foil sheets, placing in center left half of each. Fold right half of foil over potato mix and fold edges of packages together to seal tight. Grill over medium-high heat for about 25 minutes.
