Glazed Delicata Squash

2 Delicata squash
1/2 cup water
1/4 tsp. salt
3 tbs. maple syrup or honey
1 tbs. butter or margarine, melted
1 tbs. bourbon or whiskey (optional)
1/2 cup pomegranate seeds (optional)

Preheat oven to 375. Trim stem ends and cut Delicata squash lengthwise in half; scoop out the seeds and membrane. Place water in baking dish large enough to hold the squash. Place squash cut side down in dish. Bake 20 minutes or until squash is tender when pierced with a tip of a sharp knife.

Turn squash cut side up in dish; sprinkle with salt. Combine syrup, butter, and bourbon; spoon evenly over cut sides of squash, letting excess drip into cavity of squash. Broil until squash is glazed and golden brown, 4-5 minutes. Sprinkle pomegranate seeds on top.
