Broccoli Casserole1 egg, beaten
1 onion, finely chopped
8 oz. sour cream
1 10.5 oz. can cream of broccoli soup
1 10 oz. box frozen broccoli pieces, thawed
1 8 oz. pkg. cornbread stuffing, divided
16 oz.grated cheese, divided
2 Tbsp. margarine, melted
Preheat oven to 350. Spray casserole dish w/cooking spray. In a large bowl mix egg, onion, sour cream, soup, broccoli, half of stuffing & half of cheese. Pour into casserole dish. Mix remainder of stuffing & cheese & add margarine. Mix well & spread over top of casserole. Bake for 30 min.or until light brown.
NOTE: Cooked yellow squash may be substituted for broccoli.
