Spinach Salad

1 lb raw spinach
2/3 c. cooked chick peas
1/2 c. sliced mushrooms
1/2 c. sliced beets
8 oz ricotta cheese
1/3 c. pumpkin or sunflower seeds
2Tb oil
Juice of 1 lemon


Wash spinach and tear into bite sized pieces. Toss chickpeas, mushrooms, beets and ricotta. Just before serving, sprinkle in seeds and add lemon juice and oil as dressing.
