Red Wine Vinaigrette

1/4 cup red wine vinegar
(use flavours such as Garlic Basil, Greek Garden, Summer Garden or Garlic Lemon Dill)
1 teaspoon lemon juice
1 clove garlic, minced
2 - 3 tablespoons minced fresh herbs, such as basil, oregano, dill, tarragon
1 teaspoon coarse Dijon-style mustard
3/4 teaspoon salt
1 teaspoon freshly ground pepper
1/3 cup Herb Oil (or use good quality Olive Oil)

Combine vinegar, lemon juice, garlic, herbs, mustard, salt & pepper in a mixing bowl. Whisk in the herb oil until smooth. Taste and correct seasoning, adding more salt/pepper as necessary.
