Quiche Lorraine

Pie Shell:
½ cup Crisco
1 ½ cups flour
3 tablespoons water
pinch of salt


Mix ingredients. Shape into pie plate and chill.

Quiche:
1 cup cooked ham, cubed or strips
½ lb. Swiss cheese, strips
3 eggs, slightly beaten
1 ½ cups milk
1 tablespoon flour
½ teaspoon salt or onion salt
1 tablespoon butter, melted cayenne
nutmeg


Place ham cubes or strips into chilled pie shell. Cover with cheese strips. Add eggs, milk, flour and seasonings blended together. Pour the butter on top. Sprinkle with nutmeg. Bake for 30 minutes in a 400-degree oven. Cool 10 minutes before cutting.

Note: Broccoli, shrimp or crabmeat may be substituted for ham.
