Fish Fillets Baked in Packets

4 12x18 pieces of foil
1/2 cup grated carrot
1/2 cup finely chopped celery
1/4 cup grated onion
salt and pepper to taste
4 (4-5 oz) fish fillets, your choice of fish
4 lemon wedges


Preheat oven to 425. Fold foil pieces in half; open; lay flat. (Spray with non stick spray if possible); set aside. Combine carrot, celery and onion. Divide and place some on each of the foil pieces. Salt and pepper fish and place one on top of each vegetable bed. Top each fillet with remaining carrot mixture. Fold foil and seal. Place packets on large baking sheet. Bake 10-15 minutes, depending on thickness of fillets. Serve with lemon wedge.
