Cod and Apple Curry

2 Tb olive oil
1 large onion, chopped
2 garlic cloves, minced
2 tsp curry powder (or to taste)
1 (28 oz) can crushed tomatoes
2 Tb chutney
1/4 c. raisins
2 medium apples (Golden Delicious or Macoun)
1 1/2 lbs cod steaks


Heat the oil in a large skillet and saute onion and garlic for 10 minutes. Add curry powder, tomatoes, chutney and raisins. Peel, core and chop the apples. Stir into simmering mixture. Cook for 15-20 minutes. Remove skin and bones, if necessary, from cod steaks and cut into bite sized pieces. Stir into curry mixture and cook for 5-10 minutes, just until tender. Serve over rice.
