Baked Pollack

2 lg boneless skinless Pollock filets
1/4 cup chopped "fresh" Parsley
3 Tbsp Butter
2 gloves garlic, smashed and diced
1/2 Tsp dried Dill weed seasoning
Salt and Pepper to taste


Lightly oil glass-baking dish, preheat oven to 425 degrees. Place garlic in bowl with butter and melt in microwave about 30 seconds. Rinse and pat dry the filets and place them in the baking dish. Spoon garlic and butter mixture over the filets, try to cover evenly. Lightly sprinkle with salt, pepper, and dill. Sprinkle the fresh Chopped Parsley liberally over the filets (I prefer Flat Leaf Italian Parsley but any will do as long as it is Fresh). Place filets in preheated oven for 15 to 18 minutes.

Note: If you are not a true garlic fan, as I am, then this may be cut back or Eliminated but what a loss, ENJOY!
