Pumpkin & Cream Cheese Tart with Cranberry-Orange Topping
your favorite recipe for single 9-in pie crust4 pkg(3oz each) cream cheese, softened
3/4c. brown sugar
2 eggs
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp orange peel
1 (16oz) can pumpkin
1 (16oz) can whole berry cranberry sauce
Glazed Orange slices (recipe below)
Prepare pie crust according to you recipe. Press dough onto bottom and 1 1/2 in up the sides of ungreased 9-in springform pan; set aside. In a large bowl, beat cream cheese and sugar until light and fluffy. beat in eggs, one at a time. Stir in cinnamon, nutmeg, orange peel and pumpkin until smooth and well blended. Pour into pastry-lined pan; spread evenly. Place in 425* oven and immediately reduce temperature to 350*. Bake 35min or until center is set. Cool completely in pan on wire rack.
Spread whole berry cranberry sauce on top. Arrange glazed orange slices in overlapping ring on top of cranberry sauce. Refrigerate until serving time. Remove side of springform pan before serving.
Yields:10-12 servings
In a medium skillet, combine 1 cup granulated sugar and 1/4c. water. bring to a boil over medium heat; boil one minute. Add 12 thin orange slices. Cook over low heat, turning frequently. 5 minutes or until slices are almost translucent.
