Coconut Pound Cake
1 cup butter3 cups sugar
5 eggs
1 1/2 tsp. baking powder
2 cups all-purpose flour
1/2 cup milk
3 1/2 ounces flaked coconut
2 tsp. coconut extract
1/2 cup chopped walnuts
1/4 cup water
In a large bowl, cream together the 2 cups sugar and the butter or margarine. Add eggs one at a time, fully incorporating each one before adding another. Mix flour, baking powder, milk, flaked coconut, and 1 teaspoon coconut flavoring into the creamed mixture. Beat well. Pour the batter into a greased and floured 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Cool on a wire rack for just a few minutes, then place on cake platter.
To make the glaze, mix together in a small saucepan 1 cup sugar, water, 1 teaspoon coconut flavoring, and chopped nuts. Boil for 1 minute, and pour over still warm cake.
