Coconut Diamonds

1 1/3 cups moist flaked coconut
1 cup butter, softened
1 cup sugar
½ teaspoon salt
½ teaspoon vanilla
2 ¾ cups flour
Rum Icing


Whirl coconut in blender until finely grated. Set aside. In large bowl cream butter, sugar, salt and vanilla until fluffy. Stir in coconut and flour. Gather in ball. Cut in 9 portions. Shape each into rope ¾ inch thick. Press each rope out on cookie sheet lined with wax paper to form 12X1X1/2 inch strip (3 to a cookie sheet, 3 inches apart). Bake at 350 degrees for 8 to 10 minutes. Loosen strips from paper but leave on sheet. Ice. Cut diagonally in ¾ inch pieces. Remove to racks to cool.

Makes 108 pieces.
