Bourbon Pecan Truffle

2-½ cups confectionery sugar
½ cup unsweetened cocoa powder
1/3-cup butter, melted
2 tablespoons bourbon
2 tablespoons heavy cream
½ teaspoon vanilla
Dash salt
¾ cup pecans, finely chopped


Mix sugar and cocoa. Stir in remaining ingredients. Cover and refrigerate until firm. Form balls and roll in cocoa powder (about 3 tablespoons). Store in fridge in an airtight container.

Yield: about three dozen.
