Potato Refrigerator Rolls
½ cup mashed potatoes½ cup sugar
½ cup margarine
2 cups scalded milk
2 packages dry yeast
2 eggs
5 - 6 cups plain flour
1 Teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
Combine first three ingredients in a large mixing bowl. Add milk. Cool to tepid temperature (110 degrees). Add yeast, beaten eggs, 2 cups flour, salt, baking powder and baking soda. Beat thoroughly. Gradually add ¾ flour to make medium soft dough. Knead for two minutes on floured board. Place in greased bowl. Cover tightly. Refrigerate. When ready to use, form rolls and dip in melted butter, place on greased pan or in muffin tins. Let rise for 2 hours. Bake at 400 degrees for 10 minutes or until lightly brown.
