Orange-Nut Muffins
2 c. flour1/3 c. sugar
3 t. baking powder
1 t. salt
1/2 c. hazelnuts, chopped
1 egg
1/2 c. orange juice (fresh or frozen)
1 T. grated orange peel
1/2 c. orange marmalade
1/4 c. milk
1/4 c. cooking oil
In lg. mixing bowl, combine flour, sugar baking powder, salt and hazelnuts. Combine egg, orange juice, orange peel, orange marmalade, milk and oil. Add to dry ingredients and mix only until evenly moistened. Do not over-mix. Fill paper-lined muffin cups 2/3 full and set aside.
1/4 c. sugar
1 T. flour
1 T. butter, softened
1/2 t. cinnamon
In sm. mixing bowl, combine all the topping ingredients. Sprinkle topping over muffin batter. Bake at 400* for 20-25 min, or until muffins are golden brown and test done.
