Herbed Soda Bread

2/3 cups whole wheat flour
1/3 cup soy flour
1 cup white flour
2 1/2 TBS sugar
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. finely crushed dry rosemary
1/4 cup sunflower seeds
1 beaten egg
1/2 to 2/3 cups buttermilk
1 Tbs. melted butter


Sift dry ingredients together into a bowl. Add the sunflower seeds and rosemary. In a separate bowl, beat the egg with the buttermilk and butter.. Stir into the dry ingredients until just moistened, adding buttermilk if too dry. Knead right in the bowl for just a few turns. Form into a ball and flatten it slightly. With a sharp knife cut a cross into the top to scare off the devil. Place on a buttered pan and bake at 350 for 30 to 40 minutes until golden brown. Cool slightly and serve warm cut into thin slices.
