Date Bran Muffins

3/4c. Whole bran cereal
1/2c. Buttermilk
1/2c. Flour
3Tb brown sugar
1tsp baking powder
1/4tsp baking soda
1/4tsp salt
1 egg
2Tb vegetable oil
1/3c. Snipped pitted dates


In a small bowl combine bran and buttermilk; let stand about 3 min or until liquid is absorbed. In a medium bowl stir together flour, sugar, baking powder, soda & salt. Beat egg and oil into bran mixture and blend into dry mixture, stirring just until moistened. Batter will be thick. Fold in dates. Fill paper cup-lined muffin tins 2/3 full. Bake in 400* oven for 20-25min or until done. Cool on wire rack.
