Cranberry Streusel Muffins

2 TBS packed brown sugar
1 TBS all-purpose baking mix (like Bisquick)
1/3-c. milk
1 egg
1/2c. Whole berry cranberry sauce
2 c. all purpose baking mix (like Bisquick)
2 TB granulated sugar


Heat oven to 400* Grease bottoms only of 12 medium muffin cups or line with paper muffin cups. Mix brown sugar, 1 TB baking mix, set aside. Beat milk, egg & cranberry sauce slightly in a medium bowl. Stir in 2 c. baking mix and sugar just until moistened. Fill muffin cups about 1/2 full. Sprinkle tops with brown sugar mixture. Bake about 18 min or until golden. Cool slightly before removing from pan.
