Blueberry Muffins

4 cups flour
4 tsp baking powder
1/2 tsp salt
1 cup butter
2 TBS lemon juice
2 cup sugar
4 eggs
1 1/3 cups milk
2 tsp vanilla
1 tsp nutmeg
3-4 cups blueberries
Sugar to sprinkle on top


Sift the flour, baking powder, salt and nutmeg together and set aside. Cream the butter and sugar with a mixer or beaters until light and fluffy. Add the eggs one at a time blending for a few seconds before adding the next one. Add the vanilla and lemon juice and mix until blended. Add the flour mixture alternately with the milk, beginning and ending with the flour. Add the blueberries and mix by hand. Fill muffin tins (I usually use paper muffin liners in mine) 3/4 of the way full and sprinkle with sugar if desired. I like a nice sugar crunch so I go a little heavy! Bake at 350 for 15-18 mins. until they are a nice light brown.
