Basil and Sundried Tomato Muffins
3 cups self raising flour1/2 cup torn basil leaves
1/4 cup chopped sun dried tomatoes
2 tablespoons sugar
Freshly ground black pepper
1/3 cup salad oil
1 egg, beaten
1 & 1/4 cups milk
Combine the first 5 ingredients. Beat oil, egg and milk together and pour over dry ingredients. Stir just enough to dampen the dry ingredients, spoon into well greased muffin pans. Bake 18-20 mins at 375* or until well risen and brown.
Makes a dozen.
