Apple Muffins
5 TBS unsalted butter1/2 cup sugar
1 egg
1 1/4 cups flour
1/4 tsp baking powder
1 1/2 cups applesauce
Cream the butter and sugar together until fluffy then beat in the egg. Sift the flour and baking powder together and combine with the egg mixture mixing lightly with your fingers or a wooden spoon. Wrap the dough in plastic wrap and chill for one hour.
Preheat oven to 350. Grease a muffin tin. Divide the dough into thirds and set aside 1/3. Divide the remaining 2/3 into 12 pieces and press firmly into the muffin cups molding it up the sides with your fingers to make a lining about a quarter inch thick. Fill each cup with 2 tablespoons of applesauce. Roll out the remaining dough to 1/8" thick. Cut out 12 circles about 2 1/2" in diameter. Moisten the edges of the muffin tops with water and place a circle on each, pressing and pinching to seal the edges. Bake for 40 minutes. Lift them out while still hot and sprinkle with powdered sugar.
