Apple Cranberry Streusel Muffins

3 cups all purpose flour
1 1/2 cups Sugar
1/2 cup Nonfat milk or reconstituted
Nonfat dry milk
3 tablespoons Canola oil
2 teaspoons Vanilla
1 cup Chunky style unsweetened Applesauce
1 Egg
2 Egg whites
2 cups Chopped apples
1 cup Fresh or frozen cranberries
Or
1/2C dried cranberries

Streusel Topping
1/2 cup Flour
1/2 cup Brown sugar
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Cloves
2 tablespoons Diet margarine


Preheat oven 375. Use paper muffin liners. Stir together flour, sugar and baking powder; then add nonfat milk, vegetable oil, vanilla extract and applesauce. Beat till well combined. Add eggs and beat 2 minutes. Carefully stir in chopped apples and cranberries. Spoon into muffin tins 3/4 full. Add toppings. Bake 15 to 20 minutes or till done.

TOPPING: blend all ingredients except butter, then drizzle in melted margarine and blend evenly with pastry blender or fork.

Yield 18 muffins
