Apple Bran Muffins

2 c. whole wheat flour
1 1/2 c. Wheat bran
1/2 tsp salt
1 1/4 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 heaping TBS of grated orange rind
1 c. Chopped apple
1/2 c. raisins
1/2 c. chopped nuts
1/2 c. orange juice
1 1/2 c. buttermilk
1 egg, lightly beaten
1/2 c. Molasses
2 Tb applesauce


Mix together dry ingredients, then stir in fruits and nuts. Combine liquid ingredients, then stir into flour and fruit mixture until just combined (Do Not Overbeat) Pour into greased muffin tins, filling them 2/3 full. Bake at 350* for 25 minutes.

Yield: 2 dozen
