Rolled Canapés

18 slices white bread
8 ounces cream cheese
1/3 cup smoked salmon -- chopped
1 1/2 teaspoons prepared horseradish -- cream style
fresh parsley -- finely chopped


Trim crusts from bread; roll bread flat with a rolling pin. For filling, combine cream cheese, salmon, and horseradish. Gently spread some of the salmon mixture over each bread square, covering to edges. Roll as tightly as possible. Cut each roll in half crosswise. Cover and chill until serving time. Just before serving, dip one end of each roll in parsley.
