Roasted Garlic Dip with Bagel Croutons

8 medium garlic bulbs
¼ cup olive oil
½ cup water
2 tablespoons olive oil, extra
Bagel croutons
6 bagels, thinly sliced
½ cup olive oil
¾ cup sun-dried tomato paste


Place garlic bulbs in baking dish, brush with oil, add water. Bake, covered, at 180°C for 40 minutes; uncover, bake about further 45 minutes or until garlic is soft; cool. Squeeze pulp from cloves into bowl, stir in extra oil. Serve roasted garlic dip with bagel croutons. Bagel Croutons: Brush bagel slices with combined oil and paste, place on wire racks over oven trays. Bake at 180°C for about 5 minutes or until crisp.

Note: Recipe can be made a day ahead.
