Marinated Chicken Drumettes

1 1/2lb chicken drumettes, skinned
2/3c. Italian dressing
1 1/2 tsp. Italian herb seasoning, crushed
1 1/2 Hungarian paprika
1 1/2 Tbs. green chili salsa
1 Tbs. raspberry wine vinegar
Shredded lettuce for serving
Chopped fresh parsley for garnish


Place skinned drumettes in saucepan with remaining ingredients. Stir to combine. Bring to a boil over medium heat, lower to a simmer and cooked, covered, 20-30min. Adjust seasoning to taste. Place in fridge and chill 4-6hrs or overnight.

To serve: Arrange drumettes on the bed of lettuce in a spoke-like design. Sprinkle with parsley and serve.
