Cranberry-Rum Topped Brie1/2c.crushed whole or jellied cranberry sauce
2Tb packed brown sugar
1 tsp. rum extract
1/8tsp ground nutmeg
1 (8oz) round Brie cheese, at room temp
2Tb chopped pecans
Orange peel strips (optional)
In a small bowl combine cranberry sauce, brown sugar, rum extract and nutmeg. Peel off top rind of Brie cheese, leaving a 1/4in edge. Spoon the cranberry mixture onto top of cheese and sprinkle with pecans. Bake in a 450* oven for 5-7min or until cheese is softened. If desired, garnish with orange peel strips. Serve with crackers.
