Cheese Biscuits

2 c. sifted flour
1 t. salt
Dash cayenne pepper
1/2 lb. shredded Cheddar cheese
3/4 c. shortening
2 t. ground pecans

Mix and sift dry ingredients. Cut in shortening. Add cheese and mix together to form paste. Turn out on lightly floured board and roll or pat to 1/4 in. thickness. Cut with circular cutter the size of a wine glass. Brush with egg white and sprinkle with pecans. Bake in 300* oven on greased cookie sheet 15 to 20 min. Makes 60. These keep well and can be reheated.
