Bite-Size Beef Tarts
24 slices firm white bread, must be fresh!Melted butter
horseradish
1/2 lb. ground beef
3/4 to 1 cup fresh bread crumbs
1/2 cup finely minced onions
1/4 cup finely minced celery
1/4 cup finely minced green bell pepper
1/2 cup fresh mushrooms, finely minced
1 clove garlic crushed or minced
salt & pepper to taste
1/2 cup shredded cheddar cheese
You will need mini muffin tins. Remove the crusts from the bread and grind the crusts in a processor to make breadcrumbs. With a rolling pin, roll each slice of bread as flat as possible. Cut a 3" circle out of each slice and use the scraps to make breadcrumbs. Generously brush both sides of each circle with butter. Press the circles into the muffin tins and bake in a preheated 350 degree oven until golden brown and crisp. This can be done ahead and these freeze well. Sauté the garlic, onions, celery, green pepper & mushrooms in butter until soft. Add the ground beef to the pan and brown well. Season with salt & pepper, mix in the breadcrumbs and cool so it can be handled. Just before serving, place a generous amount of filling in each cup, top with horseradish (to taste) then with cheese. Bake or broil until the cheese is melted and the filling is hot.
