Porcupine Meatballs

1 lb lean ground beef
1 package beef-flavor Rice-A-Roni (or storebrand)
1 egg, beaten
2 1/2 cups hot water
about 2 Tbsp oil


Mix the ground beef, the rice/vermicelli and the egg. Form into small meatballs. In a large frying pan, brown meatballs well. Combine the hot water and the seasoning packet from the Rice-A-Roni, and pour over the browned meatballs. Cover and simmer about 30 minutes.

It doesn't really make much of a gravy, which I think of having with meatballs, but they didn't need it - the rice/pasta absorb the broth and they are quite moist and flavorful
