London Broil

½ finely diced small onion
1 garlic clove, finely minced
¼ teaspoon black pepper
2 tablespoons olive oil
1 tablespoon dry sherry
1 ½ pounds flank steak


Combine onion, garlic, pepper, oil and sherry. Rub over both sides of steak. Refrigerate for 1 hour to absorb the flavors. Broil steak for 5 minutes on each side. Carve meat on an extreme diagonal across the grain into thin slices. Serve at once.

Makes 4 to 6 servings.
